Charlie can't be played by one actor alone due to the child casting laws in this country, surely?

Yeah, I highly doubt one boy is going to perform 8 shows per week. I'm not familiar with children's casting laws but aside from that, I don't think it is practical. How is he going to fit in school alongside a full time stage role? I don't think so.
I don't think this information is true anyway, since Wikipedia has no sources for it and a google search shows up nothing except an article in the Daily Mirror where Kimberley Walsh says how much she loves sweets and the reporter jokes that she could always try for a part in Charlie and the Chocolate Factory. Aside from that, Kimberley Walsh is a "name" and I can't see her taking a role like Mrs Bucket which is likely to be extremely small. She's too young for the role anyway. I think this has been made up.
The official website still only lists Douglas Hodge on the cast page.

There will be three teams minimum - no child can perform more than two shows on one day or two shows on consecutive days - so they will split between three teams which will help with anything such as illness cover etc!

Any more casting news? My prediction for Grandpa Joe is Nigel Planer or David Bradley. How do you reckon they'll tackle Oompa Loompas? I hope cleverly with puppets rather than dressed up kids or dwarves

Why not dwarves? They are actors and would give them work through out the year!

Daniel Roache looked about 35 in the Outnumbered Xmas special so I can't see this happening
